Our Story

At Assembly Coffee Roasters, we started with a simple passion for great coffee and building a strong community. Julia and Thomas Doyle opened our shop to bring quality specialty coffee to the Berkshires in Massachusetts—whether you’re searching for local coffee spots, a creamy latte, or a strong espresso.

Julia Doyle

Co-Founder & Design Director

Before this, Julia worked at DCR in NYC and has a great eye for designing coffee shops and cafés with a clean, Asian-inspired vibe. She makes sure our spaces feel warm and inviting, perfect for enjoying a mocha, cappuccino, or seasonal Irish coffee.

Thomas Doyle

Co-Founder & Head Roaster

With a background as Head Roaster and Operations Manager at Blue Bottle Coffee, Thomas has a solid grasp on finding the best coffee beans and creating signature roasts. He knows how to get the most flavor from our grinders, espresso machines, and coffee makers, ensuring every cup is just right.

Our Craft

Micro-Roasting

Our coffee is roasted for our customers in small batches to develop the flavor profiles for each bean in each blend. Our black coffee, mocha, and cappuccino blends are always going to be fresh and our clients can count on the flavor and quality. We take raw beans and blends and ensure every roast is as perfect as we can make it.

Wholesale Program

We collaborate with a cafés, restaurants, and coffee shops to develop their own unique espresso and latte blends that consistently represent their identity. If you are interested in developing and serving espresso and lattes for Starbucks fans or developing your own customer base, we have solutions for you.

Coffee Education

Training for baristas and tips for home brewing with any option of brewing device, including Keurig, drip, or espresso machine. Learn the fundamentals of grinding, brewing, and tasting great coffee for any brew method you devise.

Berkshire Blend

Our flagship medium roast coffee is made to shine through every coffee-making device (i.e. coffee pot to a Keurig coffee maker). This coffee is meant for consumption throughout the day, which is easy with its smoothness and approachability. This coffee is made for the cappuccino, mocha, and black coffee drinker.

Perfect For: Drip, Pour Over, French Press

Single-Origin Ethiopian

A lively light roast that emphasizes the bright and floral nature of the Ethiopian highlands—a great cup of coffee for those who love specialty single origins or a light-bodied espresso. This coffee is best expressed in a coffee maker or as a pour-over, where you can get the full clarity out of the coffee.

Dark Mountain Roast

This dark roast delivers a bold punch. Dark Mountain Roast is a responsive homage to the classic profile of full-bodied coffees, like Peet's Coffee and Starbucks coffee. Great for those who want strong coffee with some kick, or classic Irish coffee rich in flavor.
